Tapas with Tim

Thursday May 1st

For Donderos’ prix-fixe tapas night on the first Thursday of May, we return to the culture of the original tapas, Spain. Join us for an assortment of delightful dishes, and bring the wine of your choice.

The term “tapa” in Spanish means a “lid.” It was applied centuries ago to the slice of bread placed on top of the glass of sherry at a tavern, maybe to keep insects out or maybe to give the customer something to nibble with his or her wine. Sometimes a slice of cheese or ham was added, and ¡como no! “tapas” were born.

The small dishes this evening will be more modern, but fully Spanish:

Local chorizo with dark chocolate

Spanish cheeses with roasted almonds and Valencia oranges

Spiced potatoes (patatas bravas) with Spanish tomato salsa

Valenciano fish sautéed with grilled sweet peppers

Chicken sautéed with olives and sherry

Roasted peppers stuffed with tuna and rice

Spanish wines of several types would go with this selection of dishes. Tim’s choices would include Albariño or Verdejo as whites, Tempranillo (particularly from Rioja) as a red, or dry Sherry.

For a great wine pairing at a modest price, see Dave Wells at the Healthy Gourmet (1087 Baxter St, telephone 706 353-3107). Dave and Tim frequently teach cooking and wine classes at the Healthy

Gourmet, and Dave selects wines to go with Tim’s style of cooking.
